My daughter is a Girl Scout which means cookie selling every spring. When you think of Girl Scout cookies there is probably one specific gem that sticks out in your hungry brain: Thin Mints! Thin Mints are a total enigma, beloved by the masses; it is the second most sold cookie in the United States (second only to Oreos) and it’s only sold 2 months out of the year. So for many people, Girl Scout cookie selling time means indulging in these little chocolate-y, mint-y bits of Heaven. For me, it’s torture time. The Girl Scouts have no gluten free Thin Mint and I spent all last February and March with a garage filled with box after box of these devil cookies, feeling very sorry for myself. That is until last week when I found this delightful item at my local Wal-Mart, in the regular cookie/cracker aisle. They are AMAZING! By far the closest thing to an actual Thin Mint I’ve ever tried.
