Although eating a gluten free diet has become relatively easy with more and more gluten free products hitting the shelves, there are still some recipes that are difficult to make taste the same as the regular, gluten-y versions. Fried chicken, chicken fried steak, mashed potatoes with gravy- all those “comfort foods” that involve a lot of breading, flour, and frying are the hardest for me. Most of the time there is no love lost between me and fried food; it’s really not healthy, no one should really eat that stuff anyway. And my waistline is sure easier to keep in check without being able to easily indulge in those types of foods. But it’s winter, it’s cold outside, and lately I had a craving for a good old chicken fry and mashed potatoes. (Another damned grilled chicken breast and a salad just doesn’t cut it some days).

My husband has mastered a gluten free chicken fried steak recipe that is truly delicious; our whole family loves it (well, except for my son that eats nothing but peanut butter; he doesn’t count in this story). The only problem in the past has been the gravy. Chicken fried steak is just not the same without some good old cream gravy slathered over the top, am I right? Our attempts at homemade gravy in the past have not been winners; the type of flour used to make the gluten free breading just did not work for making good gravy. We have tried other GF gravy mixes in the past and they have been either runny or pasty, tasteless bowls of yuck. But we recently ran across Pioneer Brand Gluten Free Country Gravy Mix and decided to give it another try. This brand of gravy is fantastic! The consistency is perfect, and the taste was great, too. While I would not say it’s an absolute dead ringer for my mother’s delightful homemade gravy, I would say it’s pretty damned close. I will definitely be using this again in the future- I actually look forward to making mashed potatoes again thanks to this gravy.
